Amaranth is a broadleaf plant with violet flowers, orange, red and gold.
This is a legendary plant, with more than 5000 years of history, formerly used in ritual ceremonies. It was one of the staple crops receiving the ancient Aztecs as a tribute.
Amaranth or huautli is closely linked to the history of ancient civilizations that have populated the Americas: Mayans, Aztecs and Incas. You can take the whole plant: the stem is eaten as a vegetable, the leaf is used for stews. But the most used is the seed that has a high nutritional content.
