Ingredients: Brown rice, water, sea salt.

Mirin is an essential condiment of the Japanese cuisine with a slightly sweet taste. It is a kind of rice wine similar to sake, but with a lower alcohol content. In the Edo period, Mirin was drunk as a sweet sake.
Mirin is used to add a bright touch to broiled fish or to erase a fish's smell. A small amount used in the place of sugar and soy sauce often improves a dish. It should not be used in large amounts as its flavor is quite strong. It is sometimes used as a sushi accompaniment. A good use for Mirin is its use in Teriyaki sauce.

Teriyaki sauce
This is a simple teriyaki sauce that works well for everyday meals, especially with leftover meat. It is best served with rice, and perhaps also steamed vegatables. It can be used to marinate meat.
The ideal meat to use would be thin slices of turkey. The sauce also goes well with egg rolls, chicken, pork, fish, and tempura. For beef, consider marinating thin strips and cooking them until somewhat dry. Ingredients:
* 1/4 cup (2 parts) soy sauce
* 1/4 cup (2 parts) mirin (sweetened rice wine for cooking)
* 2 tablespoons (1 part) common granulated sugar
Procedure
1. Mix everything in a 1-quart pot over low heat until the sugar disolves.
That's it. You'll want to heat the sauce with some pre-cooked meat in it of course, or use it to marinate some raw meat overnight in the refrigerator.
